夏季的特點(dian)是燥熱(re),“熱(re)”以“涼”克之,“燥”以“清(qing)(qing)”驅之。因(yin)(yin)此(ci),清(qing)(qing)燥解熱(re)是養(yang)(yang)生的關鍵。思想(xiang)宜(yi)清(qing)(qing)靜。盛夏酷暑(shu)蒸灼,人易感到困(kun)倦煩(fan)躁和悶(men)熱(re)不(bu)安,因(yin)(yin)此(ci)首先(xian)要(yao)使自己(ji)的思想(xiang)平靜下來,神清(qing)(qing)氣靜。故醫(yi)籍《養(yang)(yang)身(shen)纂》中(zhong)表明(ming)夏季養(yang)(yang)身(shen)“靜養(yang)(yang)勿(wu)躁”,“節嗜(shi)欲,定心(xin)氣……可(ke)(ke)居高明(ming),可(ke)(ke)遠(yuan)眺(tiao)望,可(ke)(ke)入(ru)山林(lin),可(ke)(ke)坐臺(tai)榭空(kong)敝(bi)之處,以避炎夏”。
我國民間(jian)有(you)“心(xin)靜自然(ran)涼”的說法是頗有(you)道理的。飲食宜清(qing)淡。炎夏的飲食應以(yi)(yi)清(qing)淡質(zhi)軟易于消化為(wei)主,少吃高脂厚味及辛辣上火(huo)之物(wu)。因(yin)為(wei)清(qing)淡飲食可起消熱、防暑、斂汗、補液的作用,還(huan)能增進食欲。多(duo)吃新鮮蔬果(guo)、如西紅柿、本瓜(gua)、黃(huang)瓜(gua)、絲瓜(gua)等既可滿(man)足所(suo)需營養,又可預防中暑。主食以(yi)(yi)稀干搭配為(wei)好,可吃些綠豆(dou)粥、蓮子(zi)粥以(yi)(yi)清(qing)暑。

菠(bo)(bo)菜(cai)(cai)解毒防春(chun)(chun)(chun)燥(zao):春(chun)(chun)(chun)天里(li)吃食的菜(cai)(cai)蔬(shu)還有(you)菠(bo)(bo)菜(cai)(cai),菠(bo)(bo)菜(cai)(cai)一年四季(ji)都有(you),但以春(chun)(chun)(chun)季(ji)為(wei)佳(jia),“春(chun)(chun)(chun)菠(bo)(bo)”根紅葉綠,鮮嫩異常,最為(wei)可口。春(chun)(chun)(chun)季(ji)上市的菠(bo)(bo)菜(cai)(cai),對(dui)解毒、防春(chun)(chun)(chun)燥(zao)頗有(you)益處。中醫也認為(wei)菠(bo)(bo)菜(cai)(cai)性甘涼(liang),能養血(xue)、止血(xue)、斂陰、潤(run)燥(zao)。因菠(bo)(bo)菜(cai)(cai)含草酸較多,有(you)礙鈣和鐵的吸收,吃菠(bo)(bo)菜(cai)(cai)時(shi)宜先用(yong)沸水燙軟,撈(lao)出再炒。
蔥(cong)蒜(suan)(suan)殺菌助春陽(yang):蔥(cong)、姜、蒜(suan)(suan)不僅(jin)是(shi)調味佳品,還有(you)重要的(de)藥用價值,可增進食欲、助春陽(yang),還具有(you)殺菌防病的(de)功(gong)效。春季是(shi)蔥(cong)和蒜(suan)(suan)在一年中(zhong)營養最豐富,也是(shi)最嫩、最香、最好吃的(de)時(shi)候。

2.從中(zhong)醫(yi)食(shi)療理論上講(jiang),認為秋(qiu)季(ji)屬氣(qi)燥(zao)(zao),“宜食(shi)麻以(yi)(yi)潤其燥(zao)(zao)”。在我國黃河流域,一(yi)(yi)到(dao)秋(qiu)季(ji),氣(qi)候就變(bian)得晴朗干燥(zao)(zao),因此主張應(ying)(ying)當(dang)(dang)潤燥(zao)(zao)。怎(zen)樣(yang)做到(dao)這一(yi)(yi)點呢(ni)?首先應(ying)(ying)當(dang)(dang)少吃(chi)一(yi)(yi)些(xie)刺激性強、辛(xin)辣、燥(zao)(zao)熱(re)的(de)(de)食(shi)品,如尖辣椒、胡椒等等,應(ying)(ying)當(dang)(dang)多吃(chi)一(yi)(yi)些(xie)蔬菜、瓜果,如冬瓜、蘿卜(bu)、西葫蘆、茄子、綠(lv)葉菜、蘋(pin)果、香(xiang)蕉等。另外,中(zhong)醫(yi)還認為秋(qiu)季(ji)屬合(he),萬(wan)物收斂,因此又主張“應(ying)(ying)吃(chi)辛(xin)以(yi)(yi)發(fa)散(san)”。意思(si)是(shi)說(shuo)避免(mian)各種濕(shi)熱(re)之氣(qi)積蓄。因為凡是(shi)帶有(you)辛(xin)香(xiang)氣(qi)味的(de)(de)食(shi)物,都有(you)散(san)發(fa)的(de)(de)功用,因此提(ti)倡吃(chi)一(yi)(yi)些(xie)辛(xin)香(xiang)氣(qi)味的(de)(de)食(shi)物如芹菜。3.由于(yu)秋(qiu)季(ji)天氣(qi)由熱(re)轉涼,人體為了適應(ying)(ying)這種變(bian)化(hua),生理代(dai)謝也(ye)發(fa)生變(bian)化(hua),飲食(shi)特(te)別注意不要過于(yu)生冷(leng),以(yi)(yi)免(mian)造成(cheng)腸(chang)胃消化(hua)不良(liang),發(fa)生各種消化(hua)道疾患。所以(yi)(yi)提(ti)出“秋(qiu)宜溫”的(de)(de)主張,也(ye)就是(shi)說(shuo)秋(qiu)天應(ying)(ying)當(dang)(dang)避免(mian)光(guang)吃(chi)些(xie)涼和(he)性寒的(de)(de)食(shi)物,應(ying)(ying)當(dang)(dang)多吃(chi)一(yi)(yi)些(xie)溫性食(shi)物。
秋(qiu)(qiu)(qiu)天,天氣(qi)(qi)(qi)(qi)漸漸轉涼,人(ren)們的(de)口、鼻、皮膚等部位往往會(hui)出現(xian)不(bu)同(tong)程度的(de)干燥(zao)感,故(gu)應吃(chi)(chi)些生(sheng)(sheng)津(jin)滋潤的(de)食(shi)(shi)品,少吃(chi)(chi)辛(xin)辣、煎(jian)炸(zha)食(shi)(shi)品。適合(he)秋(qiu)(qiu)(qiu)季食(shi)(shi)用的(de)食(shi)(shi)品有:百合(he):清心安神、消除疲勞,有潤燥(zao)止(zhi)咳的(de)作(zuo)(zuo)用;山藥:其特點是(shi)不(bu)熱不(bu)燥(zao),不(bu)論(lun)男女老幼、體(ti)健體(ti)弱,都適合(he)食(shi)(shi)用;蓮(lian)藕:生(sheng)(sheng)藕能清熱生(sheng)(sheng)津(jin)止(zhi)渴(ke),熟(shu)藕能健脾開(kai)胃(wei)。故(gu)有“暑天宜(yi)生(sheng)(sheng)藕,秋(qiu)(qiu)(qiu)涼宜(yi)熟(shu)藕,生(sheng)(sheng)食(shi)(shi)宜(yi)鮮嫩,熟(shu)食(shi)(shi)宜(yi)壯老”的(de)說法(fa)(fa);栗子:有健脾養胃(wei)、補(bu)腎強(qiang)骨的(de)作(zuo)(zuo)用;胡桃(tao):能溫肺定喘(chuan),又(you)能益(yi)氣(qi)(qi)(qi)(qi)養血、潤燥(zao)潤腸;花(hua)(hua)生(sheng)(sheng):深秋(qiu)(qiu)(qiu)后花(hua)(hua)生(sheng)(sheng)成(cheng)熟(shu),宜(yi)用鮮花(hua)(hua)生(sheng)(sheng)仁(ren)或研末沖湯服或水(shui)煮煎(jian)服,不(bu)宜(yi)炒吃(chi)(chi);紅棗:秋(qiu)(qiu)(qiu)食(shi)(shi)紅棗,益(yi)肺補(bu)氣(qi)(qi)(qi)(qi),如(ru)能與(yu)銀耳、百合(he)、山藥共煨食(shi)(shi),效果更好。此(ci)外,秋(qiu)(qiu)(qiu)季還適合(he)食(shi)(shi)用梨、荸薺(qi)、海蜇、胡蘿卜、薺(qi)菜(cai)、平菇、海帶(dai)、番茄、兔肉,進(jin)補(bu)則適宜(yi)食(shi)(shi)用黃芪、人(ren)參、沙參、枸杞(qi)子、何首(shou)烏等。秋(qiu)(qiu)(qiu)天的(de)主要氣(qi)(qi)(qi)(qi)候特點是(shi)干燥(zao),空氣(qi)(qi)(qi)(qi)中(zhong)缺少水(shui)分(fen),人(ren)體(ti)同(tong)樣缺少水(shui)分(fen)。但(dan)是(shi),光喝(he)白(bai)開(kai)水(shui),并不(bu)能完全抵御秋(qiu)(qiu)(qiu)燥(zao)帶(dai)來的(de)負(fu)面效應。我國古代就(jiu)有對付秋(qiu)(qiu)(qiu)燥(zao)的(de)飲食(shi)(shi)良(liang)方:“朝朝鹽水(shui),晚(wan)晚(wan)蜜湯。”換言之(zhi),喝(he)白(bai)開(kai)水(shui),水(shui)易流失,若在(zai)白(bai)開(kai)水(shui)中(zhong)加入少許(xu)食(shi)(shi)鹽,就(jiu)不(bu)那么容易流失了。白(bai)天喝(he)點鹽水(shui),晚(wan)上(shang)則喝(he)蜜水(shui),這既(ji)是(shi)補(bu)充人(ren)體(ti)水(shui)分(fen)的(de)好方法(fa)(fa),又(you)是(shi)秋(qiu)(qiu)(qiu)季養生(sheng)(sheng)、抗拒(ju)衰老的(de)飲食(shi)(shi)良(liang)方,同(tong)時還可以防止(zhi)因秋(qiu)(qiu)(qiu)燥(zao)而引(yin)起的(de)便(bian)秘,真是(shi)一舉三(san)得。
秋燥時節,還(huan)(huan)要注意(yi)不(bu)(bu)吃(chi)或少(shao)(shao)吃(chi)辛(xin)辣(la)(la)燒烤食(shi)(shi)(shi)品(pin)(pin),如(ru)(ru)辣(la)(la)椒、花椒、桂皮、生(sheng)姜(jiang)、蔥(cong)及酒等,特別(bie)是(shi)(shi)生(sheng)姜(jiang)。這(zhe)(zhe)些食(shi)(shi)(shi)品(pin)(pin)屬于熱性,又在(zai)烹飪(ren)中(zhong)失去不(bu)(bu)少(shao)(shao)水分(fen),食(shi)(shi)(shi)后(hou)容(rong)易上火。當然,將少(shao)(shao)量的(de)(de)蔥(cong)、姜(jiang)、辣(la)(la)椒作為(wei)調(diao)味(wei)品(pin)(pin),問(wen)題并不(bu)(bu)大,但(dan)不(bu)(bu)要常吃(chi)、多(duo)(duo)(duo)吃(chi)。比如(ru)(ru)生(sheng)姜(jiang),它(ta)含揮(hui)發(fa)油,可加(jia)速血液(ye)(ye)循(xun)環,同時含有(you)姜(jiang)辣(la)(la)素,具有(you)刺激胃液(ye)(ye)分(fen)泌(mi)、興奮腸(chang)道(dao)、促進消(xiao)化(hua)(hua)的(de)(de)功能(neng)。生(sheng)姜(jiang)還(huan)(huan)含有(you)姜(jiang)酚,可減少(shao)(shao)膽結石的(de)(de)發(fa)生(sheng)。在(zai)古代(dai)醫書(shu)中(zhong)也出現這(zhe)(zhe)樣的(de)(de)“警(jing)示”:“一(yi)年(nian)之內,秋不(bu)(bu)食(shi)(shi)(shi)姜(jiang);一(yi)日(ri)之內,夜不(bu)(bu)食(shi)(shi)(shi)姜(jiang)。”看(kan)來(lai)(lai),秋天不(bu)(bu)食(shi)(shi)(shi)或少(shao)(shao)食(shi)(shi)(shi)生(sheng)姜(jiang)以及其它(ta)辛(xin)辣(la)(la)的(de)(de)食(shi)(shi)(shi)物,早已引起古人(ren)(ren)(ren)的(de)(de)重視(shi),這(zhe)(zhe)是(shi)(shi)很有(you)道(dao)理的(de)(de)。秋季(ji)是(shi)(shi)人(ren)(ren)(ren)最容(rong)易長(chang)脂肪(fang)的(de)(de)季(ji)節。這(zhe)(zhe)是(shi)(shi)因為(wei)立秋之后(hou),天氣慢慢地(di)變得(de)涼爽起來(lai)(lai),人(ren)(ren)(ren)的(de)(de)食(shi)(shi)(shi)欲大開,夜間的(de)(de)休息也舒服多(duo)(duo)(duo)了,閑暇(xia)時間疲憊的(de)(de)身(shen)體(ti)更(geng)愿(yuan)(yuan)意(yi)安靜地(di)休息,而不(bu)(bu)愿(yuan)(yuan)意(yi)參加(jia)有(you)體(ti)力消(xiao)耗(hao)的(de)(de)活(huo)動(dong)(dong)。這(zhe)(zhe)樣一(yi)來(lai)(lai),人(ren)(ren)(ren)體(ti)每天的(de)(de)熱量攝入大都(dou)超過熱量消(xiao)耗(hao),使脂肪(fang)一(yi)點點地(di)囤積起來(lai)(lai)。如(ru)(ru)果(guo)不(bu)(bu)加(jia)以調(diao)整,經過秋、冬兩個季(ji)節,人(ren)(ren)(ren)就會(hui)胖(pang)很多(duo)(duo)(duo)。年(nian)復一(yi)年(nian),人(ren)(ren)(ren)就會(hui)很快(kuai)“發(fa)福”起來(lai)(lai)。更(geng)要命的(de)(de)是(shi)(shi),肥胖(pang)既有(you)礙人(ren)(ren)(ren)的(de)(de)形體(ti)美,還(huan)(huan)會(hui)帶來(lai)(lai)高血壓(ya)、冠心病(bing)、腦動(dong)(dong)脈(mo)硬(ying)化(hua)(hua)等“文明(ming)病(bing)”,所以一(yi)定不(bu)(bu)能(neng)“縱(zong)容(rong)”它(ta)。
栗(li)子煮粥(zhou)吃(chi),能補(bu)中氣(qi),單獨蒸、炒,剝殼而食(shi)(shi),不僅口(kou)(kou)味好,而且營(ying)養(yang)價值高。霜降是秋季最后一(yi)個節(jie)氣(qi),過后就是“立(li)冬”。俗語“補(bu)冬不如(ru)補(bu)霜降”。秋補(bu)既吃(chi)羊肉(rou)也(ye)吃(chi)兔肉(rou)。水果(guo)作(zuo)(zuo)為時尚食(shi)(shi)品,盡人皆知。然而,水果(guo)也(ye)可(ke)(ke)以作(zuo)(zuo)為補(bu)品,如(ru)秋季的梨子和柿子老年人除了不要秋凍,核心的問(wen)題(ti)是飲(yin)(yin)食(shi)(shi)的選(xuan)擇和搭配,有(you)以下(xia)幾方面:防寒溫(wen)里每日的早餐,用(yong)(yong)溫(wen)熱(re)性質的食(shi)(shi)物(wu),如(ru)煮粥(zhou)配大(da)棗和干姜、核桃(tao)仁(ren)、甜杏仁(ren)、葡(pu)萄等,也(ye)可(ke)(ke)以食(shi)(shi)用(yong)(yong)豆漿、胡(hu)辣(la)湯(tang)、羊肉(rou)湯(tang)、醋(cu)熘(liu)白菜、糖蒜等。排濕祛風遇有(you)風雨陰(yin)濕天氣(qi)或者體(ti)內(nei)有(you)濕、大(da)便稀(xi)的情(qing)況,應增加祛風排濕的飲(yin)(yin)食(shi)(shi),如(ru)選(xuan)用(yong)(yong)大(da)米(mi)、扁豆、紅(hong)小豆、薏米(mi)、蓮子、栗(li)子、蔥、姜、花(hua)椒(jiao)、茴香、丁香、胡(hu)椒(jiao)等。潤(run)燥滋(zi)陰(yin)在(zai)干燥天氣(qi)或口(kou)(kou)干舌燥、大(da)便干的情(qing)況下(xia),應選(xuan)擇潤(run)燥滋(zi)陰(yin)的飲(yin)(yin)食(shi)(shi),此類飲(yin)(yin)食(shi)(shi)品種能增強免疫力,可(ke)(ke)選(xuan)用(yong)(yong)全麥面、小麥仁(ren)、豆芽、豆漿、花(hua)生(sheng)、芝麻、紅(hong)薯、山藥、南(nan)瓜、蘿卜、白菜、蓮菜、百(bai)合、木耳、梨、蘋果(guo)、葡(pu)萄、枸杞、大(da)棗、甜杏仁(ren)、甘蔗(zhe)、蜂(feng)蜜、鴨蛋、蒸雞蛋羹等。收(shou)斂陽(yang)(yang)氣(qi)在(zai)飲(yin)(yin)食(shi)(shi)中適量增加山楂、五味子、柿醋(cu)等酸味食(shi)(shi)物(wu)可(ke)(ke)收(shou)斂陽(yang)(yang)氣(qi),若無風寒天氣(qi)或體(ti)內(nei)沒有(you)涼寒,應盡量少(shao)用(yong)(yong)或不用(yong)(yong)解表發汗的食(shi)(shi)品,如(ru)大(da)蔥、生(sheng)姜、辣(la)椒(jiao)、芥末等。
冬(dong)(dong)(dong)(dong)季(ji)(ji)(ji)(ji):冬(dong)(dong)(dong)(dong)季(ji)(ji)(ji)(ji)是一(yi)個(ge)寒(han)(han)冷(leng)的(de)季(ji)(ji)(ji)(ji)節(jie)(jie)。祖國醫學認為,冬(dong)(dong)(dong)(dong)令(ling)進(jin)(jin)(jin)補(bu)(bu)(bu)與平衡陰陽(yang)(yang)、疏通經絡(luo)、調和(he)氣(qi)(qi)血(xue)有(you)(you)密(mi)切(qie)關(guan)系。老(lao)年(nian)人由于機體功(gong)能減退,抵抗能力(li)低下等,在寒(han)(han)冷(leng)季(ji)(ji)(ji)(ji)節(jie)(jie),更宜進(jin)(jin)(jin)行食(shi)補(bu)(bu)(bu)。這(zhe)(zhe)對改善(shan)營(ying)養狀況,增(zeng)強(qiang)機體免(mian)(mian)疫功(gong)能,促(cu)進(jin)(jin)(jin)病(bing)體康復等方面,更能顯(xian)示出藥物(wu)(wu)(wu)所不能替(ti)代(dai)的(de)效果。冬(dong)(dong)(dong)(dong)季(ji)(ji)(ji)(ji)進(jin)(jin)(jin)補(bu)(bu)(bu)應(ying)順應(ying)自然(ran),注意(yi)養陽(yang)(yang),以滋補(bu)(bu)(bu)為主。根據(ju)中醫“虛則補(bu)(bu)(bu)之,寒(han)(han)則溫(wen)(wen)(wen)之”的(de)原則,在膳食(shi)中應(ying)多(duo)吃溫(wen)(wen)(wen)性、熱性特別是溫(wen)(wen)(wen)補(bu)(bu)(bu)腎陽(yang)(yang)的(de)食(shi)物(wu)(wu)(wu)進(jin)(jin)(jin)行調理,以提高(gao)機體的(de)耐(nai)寒(han)(han)能力(li)。冬(dong)(dong)(dong)(dong)季(ji)(ji)(ji)(ji)“食(shi)補(bu)(bu)(bu)”,應(ying)供給富含蛋白質、維生素(su)和(he)易于消化的(de)食(shi)物(wu)(wu)(wu)。可(ke)(ke)選(xuan)食(shi):粳(jing)米、秈米、玉米、小(xiao)麥、黃豆、豌豆等谷豆類;韭菜(cai)、香菜(cai)、大(da)蒜(suan)、蘿卜(bu)、黃花菜(cai)等蔬菜(cai);羊肉(rou)(rou)(rou)、狗肉(rou)(rou)(rou)、牛肉(rou)(rou)(rou)、雞肉(rou)(rou)(rou)及鱔(shan)魚(yu)(yu)(yu)、鯉魚(yu)(yu)(yu)、鰱魚(yu)(yu)(yu)、帶魚(yu)(yu)(yu)、蝦等肉(rou)(rou)(rou)食(shi);橘子、椰子、菠蘿、荔枝(zhi)、桂圓等水果。狗肉(rou)(rou)(rou)和(he)羊肉(rou)(rou)(rou)是老(lao)人冬(dong)(dong)(dong)(dong)季(ji)(ji)(ji)(ji)滋補(bu)(bu)(bu)佳(jia)品。老(lao)年(nian)人每天早晨服人參(can)酒(jiu)或黃芪酒(jiu)1小(xiao)杯,可(ke)(ke)防風御寒(han)(han)活血(xue)。體質虛弱的(de)老(lao)年(nian)人;冬(dong)(dong)(dong)(dong)季(ji)(ji)(ji)(ji)常(chang)食(shi)燉(dun)母雞、精肉(rou)(rou)(rou)、蹄筋,常(chang)飲(yin)牛奶、豆漿(jiang)等,可(ke)(ke)增(zeng)強(qiang)體質。將牛肉(rou)(rou)(rou)適(shi)量切(qie)小(xiao)塊(kuai),加(jia)黃酒(jiu)、蔥(cong)、姜、用砂鍋(guo)燉(dun)爛,食(shi)肉(rou)(rou)(rou)喝湯,有(you)(you)益氣(qi)(qi)止渴、強(qiang)筋壯骨、滋養脾胃功(gong)效。陽(yang)(yang)氣(qi)(qi)不足的(de)老(lao)人,可(ke)(ke)將羊肉(rou)(rou)(rou)與蘿卜(bu)同煮,然(ran)后去(qu)掉蘿卜(bu)(即用以除去(qu)羊肉(rou)(rou)(rou)的(de)膻腥味),加(jia)肉(rou)(rou)(rou)蓯蓉15克,巴戟天15克,枸(gou)杞子15克同煮,食(shi)羊肉(rou)(rou)(rou)飲(yin)湯,有(you)(you)興(xing)陽(yang)(yang)溫(wen)(wen)(wen)運之功(gong)效。現代(dai)醫學認為,冬(dong)(dong)(dong)(dong)令(ling)進(jin)(jin)(jin)補(bu)(bu)(bu)能提高(gao)人體的(de)免(mian)(mian)疫功(gong)能,促(cu)進(jin)(jin)(jin)新陳代(dai)謝,使畏寒(han)(han)的(de)現象得到改善(shan)。冬(dong)(dong)(dong)(dong)令(ling)進(jin)(jin)(jin)補(bu)(bu)(bu)還能調節(jie)(jie)體內的(de)物(wu)(wu)(wu)質代(dai)謝,使營(ying)養物(wu)(wu)(wu)質轉化的(de)能量最大(da)限度地貯(zhu)存(cun)于體內,有(you)(you)助于體內陽(yang)(yang)氣(qi)(qi)的(de)升發,為來年(nian)的(de)身體健康打好基(ji)礎。俗話(hua)說(shuo)“三九(jiu)補(bu)(bu)(bu)一(yi)冬(dong)(dong)(dong)(dong),來年(nian)無病(bing)痛”,就是這(zhe)(zhe)個(ge)道理。
